2016 RZX Shows cool temp

2016 RZX with Indmar 440 6,2 Liter with heavy ballast at Lake Havasu with ambient 115* shows 160 degrees on instrument cluster. Changed Thermostat and thermo temperature reading at T Star housing was around 220*

Should I suspect a temperature sending sensor?
