I have been wanting to put a second bilge pump in my boat. The one I have works fine, but it is a manual on/off.

I am planning on a automatic 1200 gph bilge pump. Could it just be glued down with an expoxy glue or does it have to be screwed to the bottom of the boat?

If you epoxy it down, you will never be able to remove it (in one piece).

Check the wiring going to yours, there should be 3 wires. One is hot, one from the switch, one ground. If that's the case, you have a combination manual/auto pump and your existing pump float switch is probably defective. I just replaced my pump because the float switch didn't work and it only came on when I flipped the switch. Now it kicks on by itself at a certain level of water, but I can turn it on manually too if I want.
