I am winterized, but yesterday has me realizing I need to put one of my outboard boats back together. It was SO nice, and would have been a great day to run, without the worry of cracking a block...

I think I might start looking for another sailblat. I have owned many over the last 10 years, and am without at the moment for the first time in a long time. A Catalina 22 would be a good one, as it is pushed nicely by a little 5-horse motor, is a breeze to sail, and still has nice accomodations inside for a couple to spend a night out of yoy want.
I had a C22 about 6 years ago, and it was probably my favorite boat in terms of all around ease of use, minimal maintenance, and the ability to make a gallon of gasoline last all weekend...

yeah its supposed to get below freezing a couple nights this week... EEK
How long would it have to be below freezing before the water in the engine would freeze and crack the block?
The short term drops that happen this part of the year should not bother you. It will be sustained temps just above freezing with lows below freezing for severa hours to cause damage.
That being said, a freak 8 hour spell right now below freezing would run the potential of causing damage, so it is good to be prudent...

it supposed to get to 32 tonight and 27 tomorrow night..
You should be seriously considering getting things put away. A brief period below freeaing will not cause problems, but I am not an inboard mechaninc, and I do not provide your warranty, so me telling you you have a few weeks is no excuse for delaying putting the boat away for the winter.
