I have two favorite all purpose marinating procedures. The first is good for beef:
Cavenders greek seasoning liberally on both sides of the steak. Rub it in lightly. Then top and cover with Lousisana Brand hot sauce. Carefully pour in a beer around the steak, not washing off the hot sauce. Marinate a minumum of 2 hours, 24 preferrably.
Chicken and pork like Cavenders all over followed with a liberal coating of black pepper. Lay in a dish and carefully pour in orange juice being careful not to disturb spice layer on top. Again, a minimum of two, and preferably 24.
Hit a super hot grill to sear both sides, then turn heat down or go indirect if over charcoal.
Beef to medium rare, cook pork and chicken until an internal temp of 180.It's not an optical illusion.
It just looks like one.....
