For you guys that have smokers. What kind do you have? I have a simple barrel style smoker but I feel like I want/need something bigger. Something maybe with an offset smoker box so I can actually access the entire cooking area. Right now I have to build my fire on one side of the cooking area and so that only leaves half the area for the meat. I can only do 2 racks of ribs at a time. I want to double or triple that number.

My former boss loves his traeger.

But he also has a refrigerator that he modified into a big azz smoker for large quantities at very low heat.
