I never have, but they are supposed to be great. Generally, the larger the animal, the less gamey it tastes. Antelope can be pretty strong, deer is better, elk is even better, and moose is best.

Speaking of shooting cows...

My old barber up in MT used to buy a whole cow (moo - cattle) at a time from ranchers he knew. One year, he simply shot the cow and winched it into the bed of his truck. It was during hunting season, and he stopped at a game check station. Game wardens kinda freaked out until they could confirm that he had the rancher's permission to bag it.
