Get the 27. I have a 24 (I like the size of it). My father-in-law has the 21...too small. Go big or go home!!!

Apple care is up to you. I'd pass on getting it for the iMac...though It's worth it for the iPhone.

It was not the pro...he bought it himself working the summer before his sophomore year. I paid for the applecare.....it ends up he never had to use it and they have tech support on campus.
