1 - For the check valve on the vent line which way should the arrow be pointing? To the sac or to the thru hull
2 - I am planning to have my drain pumps in the very back of the transom similar to Masons. They will essentially be on their sides with the drain line running straight up. From there it will catch the tee to the vent line and run across the top to the opposite side to the thru hull. The question, when it comes to winterizing or ensuring that all the water is out will the pump push all that out or will some still settle in the line? If it settles how do you get it all out?

The arrow indicates the flow. You want the air and water to pass from the sac to the t-hull. Blow through it and you will see.

Most if not all the water will drain from the fill plumbing when the bout is pulled from the water. For the drain side, just unplug the drain port's quick-connect. Any remaining water will exit the pumps inlet. This also gives you the oportunity to get the sacs out of the locker so that the carpet under lem can dry. can dry
