I have the same boat in red and love it. It only has two coolers not three. (I think they are including the glove box as one as it has a drain)
I also noticed from the pics , that all the speakers are in the main area, you will want to add a set upfront in the bow.
That engine has more than enough power for whatever you want to do and the GPH is not bad. I average around 6 GPH and I have a friend who has a RZ2 and only gets around 10GPH (gallons per hour) Also that boat has a 38 gallon tank.
