Well, in an attempt to inspect the fluid level of my taps hydraulics (because I was only getting about an inch of travel Here's were I blew it - I unscrewed the cap with the wire going to it instead of the fill plug, and upon removal of this cap the presure shot hydraulic fluid along with a metal pin type thing out. A few questions. How much travel should the taps hydraulics have? Is hydraulic fluid flammable? Once I replace the fluid do I need to bleed the lines?

Really need to provide which boat you have. The newer ones have a different TAPS system.
Mine's a 2001 with the first TAPS system. Mine doesn't really have hydraulic fluid - ATF Transmission fluid. So while it will burn, it's not really flammable.
Not sure about the bleeding thing. I've always just topped mine off.
Amount of travel depends on which system you have. As I understand it, the newer system operates differently.
