Engine runs fine, then idles rough and dies in gear, then runs fine again

I have a weird engine problem that I'm hoping you guys can help me diagnose. This happened today for the third time this year. 2007 22ve with 5.7L Marine Power...we go stick the boat in the water and everything is fine for a while. Pull the kids on the Zup board for an hour or two, starting and stopping several times with no issues. Go back to the dock and sit for an hour or two. Then when we get ready to leave the dock, the engine starts idling really rough, and sputters and/or dies when I put it in gear. The first two times this happened, I just let it idle rough for a little bit (30-60 seconds probably) and it started running fine again. Today when it happened it kept dying when idling and then wouldn't start. I called my dad to get a tow because we were just a few hundred feet from his dock. He had us pulled halfway back to the dock when I tried it again (probably 5-10 minutes from when it started acting up) and it fired right up and ran fine all the way back to the boat ramp.

The first time it happened I thought maybe it was a little moisture in the gas tank because I forgot to fill it up before it sat over the winter, but it has had close to two tanks of gas through it by now.

    Any ideas? Thanks in advance!

After doing some more searching/reading on here, it sounds like possible vapor lock. Can anyone confirm and/or recommend how to fix? Thanks!
