Is it ok to listen to the stereo while connected to the onboard charger. How much different would it be vs receiving a charge from the alternator.

It wouldn't be any different. Your onboard charger will switch from float mode to charging mode when the voltage gets down to a certain level. This is assuming that you've got an onboard charger that is not 15+ years old. It won't hurt your batteries or charger.Be excellent to one another.

Is ok to listen to the stereo for awhile at a moderate level while the charge is on. Just note that most on-board charges are NOT power supplies and not designed to spend long hours in full full bulk charge mode.

Its is correct, that for proper charging you want the dual bank switch off, so the charge can "see" each bank independently and charge accordingly. In the case of listening to the audio for a little bit while prepping the boat for going out or getting ready to put her away, there is no issue with having the switch on and the charger plugged in.
