The last couple of times we have been out I have noticed my engine temp drop all the way down to 100 deg. and stay there. It starts out fine reading 160-170 then after a while it just drops. It does not seem to have any effect on the engine so I'm wondering if it could be a loose electrical connection or does this sound like the thermostat is getting stuck open? Is there a way I can self diagnose this problem?

Also could a bad sending unit.
The sending unit is just a variable resister. As the temperature increase the resistance changes. Based on this change the voltage will change going back to the gauge. If this is an analog gauge (uses a needle) it could also be a bad gauge. The needle will move based on the volts it receives.
The easiest thing to do at home is replace the t- stat (they are cheap and make sure to get the correct temperature setting, as boats are much lower than cars. The one in my MP engine runs at 145 f)
The second thing would be to hook a meter inline with the sending unit and seeing what is doing. If you have one, you could connect a temperature probe to the engine and see what the real temperature reading is.
