I have carpet, and it's held up well for 6 seasons. One thing I read a long time ago on this site was, if the trailer has sat in the heat for a long time, dunk the trailer and get the bunks wet for a couple of minutes before loading the boat. Supposedly makes it easier on the carpet. Not sure if that's the reason, but I've been happy with the way my carpet has held up.

I do it because it makes it easier to drive on or winch on also

Definitely carpet...plastic can scratch/mar/damage the gel coat more than carpet.
