If you are on a river with any kind of flow you will likely want to use a paddle wheel, if that's even an option any more. The paddle wheel shows the speed difference from the water to the boat. So if your river flows 3mph and you surf at 11mph the paddle wheel will always show 11mph. With GPS it will always show your travel speed based on nonmoving land, for example. So you would then need to adjust your surf speed to 9mph going upstream or 14 when going downstream. You would also always need to know the flow rates of your river and make constant adjustments. With a paddle wheel just set it and forget it. Never been on a river so I have no idea how big of an issue it is. This is all just theory to me.
On a lake, I would always take GPS over paddle wheel. Very accurate and no moving parts to have fail down the road.
Also, don't just think that the ability to hold a specific speed is based on what speed control you use. GPS wont hold perfect speed if you are propped wrong, heavy weighted, and/or in rough water. You'll find it always hunting, speeding up and slowing down to maintain your set speed. In ideal conditions it will hold the speed great.

we boated on the fox river in wisconsin regularly when there. had to make adjustments when going up and down stream as unstuck calls out. it was only a mph or 2 each way and was easy to do but something else for a noob driver to remember when I was in the water surfing .
if my monies, I'd opt for gps if on a lake and if you only ride rivers then leave at paddlewheel but if your budget is tight you can use wheel on a lake. it won't be as reliable or steady as gps based on our experience on same lake with a supra paddlewheel and tige gps boat.2012 22ve.. RIP 4/17

As I recall, you cannot make speed adjustments with the throttle once cruise is set. You need to push the throttle far enough forward to reach your set speed then it takes over from there. You cannot increase speed. Once you pull back enough on the throttle it shuts the cruise off.
Once cruise is on and set you make any speed adjustments through the screen or smart wheel, tapping buttons to increase or decrease speed.

I have the zero off and it’s the opposite of cruse control in a car. In a car, when cruise control is set, cruise control sets the minimal speed. If you take your foot off the throttle, the car attempts to maintain the set speed, but if you put you foot in the throttle you can increase the speed of the car...
The zero off is the opposite, when zero off is on, the boat will not go any faster than the set speed, but if you pull back of the throttle you can go any speed slower than the set speed.
