One more thing... when I add my 2nd battery, do I replace the current on/off switch with the Perko switch or do I add the Perko to the existing? Seems like I wouldn't need the old one once I add the Perko...

For a simple 2 battery setup, no, you would not need an ON/OFF and a 1/2/BOTH/OFF switch.
