I know that the difference between the Jabsco pump and the Simer pumps are that the Jabsco pumps are ignition protected. so that means that you can put them in the engine bay but what will happen exactly if you were to use the Simer pumps.

Ignition protected basically means that it will contain any sparks that may be generated by the motor windings. Non-IP may allow those sparks to ignite gas fumes in the bilge area.
Go with an IP or locate the pump out of the bilge
