I put this together at West Marine today it is all 1-1/4 thru-hull, elbow, shut off, to a 1-1/2 adaptor for the hose to feed the manifold (I could not find 1-1/4 hose so I went to 1-1/2)

Except for the through hull, wouldn't it be cheaper to go to a plumbing supply house? Both expensive though.
Yes, but from a safety standpoint, do you want schedule 40 PVC or bronze between your hull and the lake bottom No worries using PVC ans rubber for everything AFTER the shut-off valve

Besides price can someone tell me the difference between a $52 dollar brass ball valve from West Marine versus a $20 dollar one from Lowes? Is the $20 dollar one good enough for my manifold shut off?

You slap the word 'marine' or 'medical' on anything that already exists and you can charge double for it. IMO, brass is brass. I would go with the Lowe's stuff.
That's what I did, $20 from Lowes. If it's good enough to hold back the water pressure from the city in my house and not leak, it's probably going to be ok in my boat.
Except most marine grade plumbing is bronze. But on a boat that's used for recreation and is either trailered or sits on a lift. a brass one from the local hardware store may do just fine for year.

For the 2010's, they use a 1" bronze shroom for each pump.
